The main difference between nonstick pans and carbon steel pans is in how they are made to be nonstick. Unlike nonstick pans, carbon steel pans do not have a chemical coating to make them nonstick, but rather are made nonstick through layers of seasoning which are built up over time. These seasoning layers make the carbon steel pan nonstick much like a cast-iron skillet.
